Instructions
To Fry:
1. Roll the Corn in an egg wash (eggs, milk, and water)
2. Dredge in seasoned flour (AP flour and Rice flour, combined)
3. Heat oil to 325F
4. Fry Corn 6-8 mins or until golden brown
To Grill:
5. Skip the wash/dredge- Over high heat, grill evenly to achieve a light char on all sides. Hold in sealed container until ready to serve. Brush with seasoned melted butter before topping.
6. After frying or grilling, stack corn and dust with cayenne and paprika.
6. In a bowl, mix sour cream or crema, mayo, lime juice, honey, and Cutino Chipotle Sauce
7. Drizzle over corn liberally.
8. Finish by topping with jalapeños, cotija cheese, and more hot sauce!
