Ingredients
4-5 Ears of Sweet Corn (Shucked & Halved into cobs)
Instructions
Roll the Corn in an egg wash (3 Eggs, 2oz Milk, 2oz water)
Dredge in seasoned flour:
1 Pint AP flour
4oz Rice flour
Heat oil to 325F
Fry Corn 6-8 mins or until golden brown.
To Grill -Skip the wash/dredge- Over high heat, grill evenly to achieve a light char on all sides. Hold in sealed container until ready to serve. Brush with seasoned melted butter before topping.
Stack Corn and dust with Cayenne & Paprika powder.
In a bowl mix-
8oz Crema or Sour Cream
4oz Mayo
2oz Lime juice
2oz Honey
2oz Cutino Sauce Chipotle
Drizzle over Corn liberally
Finish with-
3oz Cotija Cheese (Crumbled)
2 Jalapeños (Deseeded & Finely chopped)
A few more drops of Cutino Sauce Chipotle
